Yolk’s food cart brings less than typical breakfast to the streets of Vancouver. On most days, you can find them parked right outside Stadium Skytrain station at Dunsmuir and Beatty. On other days you can find them roving around various Food Cart Festivals, or — during our encounter — at the Trout Lake Farmer’s market.
As their name indicates, Yolk’s breakfasts revolve around the egg — specifically in a breakfast sandwich. The breakfast sandwich may have been done to death, but Yolk’s elevates the humble breakfast staple by poaching them (rather than the default frying to a rubber puck consistency) and piling them on with well considered toppings: double smoked bacon, hand carved honey ham, or — in our case — Panko-Tempuro Avocado. The beautifully crusted Avocado texture was a harmonious accompaniment to the nicely soft poached egg that oozed onto the toasted English muffin further enhanced by the tangy salsa verde and savoury white cheddar.
But breakfast doesn’t stop there. Today, Chicken and Waffles were on the menu. Two fluffy quarters of Belgian-style waffles sandwich the crispy, panko crusted chicken breast drizzled with maple syrup and gravy — the sweet and savoury breakfast of champions.
Our breakfasts came to just over $22 including tip. Don’t expect gargantuan portions at Yolk’s, but the well executed twists on morning meal staples could certainly motivate anyone to skip that snooze button.
